Christophe Mignon 2003 Pur Meunier Non Dose

Ever since we first started importing from Christophe Mignon, he has been trying to persuade us to take a champagne without any cane sugar added in the dosage. This added sugar is traditionally used in an effort to balance the acidity and to produce a well rounded champagne.  Exactly how much sugar used is a matter of personal choice for the vigneron and in this case we are easily persuaded that the addition of sugar would only serve to throw the finished article out of balance.

This  one hundred per cent pinot meunier from the 2003 vintage is just about as natural as it comes. It is light and fresh, fruity and perfectly well balanced.
