'La Cachotte'...the name comes from the wine huts which were used as eating places for the winemakers and a storage place for their tools.... is a 100% Chardonnay cuvée made from 40 year old vines.
This Blanc de Blancs rests in oak barrels for 12 months before being left to age on it's lees for 6 years, using corks to provoke a slow and controlled oxidation.
This gold, amber coloured champagne has a perfect clarity. There is a nose of a large complexity of aromas including liquorice, honey and caramel. Lively and stable in the mouth with hints of dried fruits, it can accompany all meals with white meats.
