Christophe Mignon Coup de Foudre 3 Cépages
This is made from equal parts of Pinot Noir, Chardonnay and Pinot Meunier. After the first fermentation, it spends 9 months in new oak before bottling. It then sits on its lees for a further three years before disgorgement without any sugar in the dosage. The result is well-balanced champagne with pleasant aromas of dried fruit and vanilla.
